Sprout update: the ones the cats haven't eaten are doing well. After they'd germinated on the wet paper towel, I tore off the paper towel around the seeds and planted that and the seeds in a little seed starter container with lots of compartments (and a lid to keep the cats out). I've cut holes in the lid so the plants don't get too hot or moist but still have protection.
